Sweet Potato Filo Tart

A quick and simple recipe using our exclusive Bakeomatic function in our Combi-Steam oven to create the perfect crispy filo tart, with zesty lemon, feta and sweet potato filling.

Ingredients

  • 350g sweet potato (peeled & sliced ½ cm thick) – approx. 1 large

  • ½ tsp ground nutmeg

  • 4 sheets fresh filo pastry

  • 50g butter (melted)

  • 50g fresh baby spinach leaves (roughly

  • chopped)

  • 100g Danish style feta

  • 3 XL eggs

  • 150ml cream

  • 2 tbs freshly chopped dill

  • 1 lemon (zested)

  • Rocket to garnish

Method

  1. Lay the sweet potato slices over a perforated stainless steel tray. Sprinkle with nutmeg and some salt and pepper. Place the tray into the CombiSteam. Select Steam at 100˚C and cook for 8 minutes. Remove and set aside to cool.

  2. Select BakeOMatic – Flan on the Combi-Steam or Combair SL/P. Select Medium Browned and start the prompted preheating process.

  3. Line a long rectangular tart tin (with removable base) with one sheet of filo pastry letting the edges overhang. Brush with a little melted butter. Add a second sheet on top and brush with little more butter. Finish with the third layer of pastry. Fold the sides in roughly to create an edge around the tin.
    Place the tin onto an oven rack.

  4. Cover the base of the pastry with some sweet potato making a single layer, overlapping slightly if needed. Top with the spinach leaves and ½ of the dill. Crumble over the feta. Top with another layer of sweet potato.

  5. Whisk the eggs, cream and lemon zest in a small jug. Season the mixture very well with salt and pepper. Pour the mixture slowly over the filling. Jiggle the tart gently to help the mixture settle into the filling. Continue adding until almost to the top of the pastry. Don’t overfill.

  6. Place the tart on the rack carefully into Level 2 of the pre-heated Combi-Steam or Combair SL/P.
    Press Start to begin the automatic program.

  7. Remove the tart at the end of the automatic cooking time. Immediately remove and place onto a wire rack until serving.

  8. To serve, sprinkle over the remaining fresh dill, slice and garnish with rocket.
